Toasted sourdough, smashed avocado, roasted tomatoes, pan fried mushrooms, hash browns and the Mexilicious Smoky Bean Salsa - WINNER!!
To make my own ‘hash browns’ – I use grated potato (squeeze out excess liquid) grated carrot, finely chopped onion and a little plain flour and pinch of salt. Shallow fry until super crispy!
